Good old home cookin'

We tried out this new recipe the other day with some alterations and it was so good that I thought I would share it.

Fettuccine Alfredo

2 1/2 - 3 lbs. boneless, skinless chicken breasts

Marinade:

2 tsp. salt
2 Tbs. soy sauce
1 tsp. sugar
1/2 tsp. pepper
2 Tbs. oil
2 lg garlic cloves


1 12 oz package fettuccine noodles
2 lbs sliced carrot (we used about 1 lb and it was plenty for us)
2 cubes butter (again we only used one, my mother in law tried two and said it was way too buttery)
2 cups whipping cream
1 - 1 1/2 cups grated Parmesan
1/4 c. snipped, fresh parsley
salt and pepper to taste

Cut the chicken breasts into small chunks. Stir together salt, soy sauce, sugar, pepper, oil and garlic in a mixing bowl. Toss chicken into the marinade. Cook the chicken in a large frying pan with the lid on until the chicken turns brown, stirring frequently. Cook fettuccine noodles as directed by the package. In a saucepan boil carrots in water until they are tender. Drain carrots. In a 9x13-inch pan, mix up butter, cream, and Parmesan. Place in oven at 350 degrees until the butter is melted. Keep in the warm oven until the chicken and carrots are done. When the chicken and carrots are done remove the 9x13 pan from the oven and add fresh parsley, salt, and pepper to the butter cream mixture. Then toss in the cooked, drained noodles and the chicken and carrots.

Your meal is now ready to enjoy!!
